Chia Pots

Ingredients

1 cup of almond milk or coconut milk

1/3 cup chia seeds

raspberries (frozen or fresh)

Toppings of your choice: pumpkin seeds, sunflower seeds, walnuts, coconut flakes, blueberries

Method

Mix a cup of almond milk (or coconut milk) with the chia seeds in a jar or glass. Top with raspberries and nuts and seeds and leave in the fridge for 4 hours minimum to set.

This is a quick and easy breakfast to prepare the night before. It is also a tasty dessert.

I’ve made it with grated apple, lemon juice and cinnamon to the original mixture with some raspberries mixed in before it sets in the fridge.

You can get creative with different layers, alternating berries, seeds and nuts to suit your taste.
