Broccoli and cauliflower soup

 

Ingredients

500 gr broccoli florets

500 gr cauliflower florets

1 onion chopped

2 tsp cumin

1 litre stock

1 1/2 cups soymilk

Olive oil

Method

Saute’ onion with olive oil and add the cumin.

Add broccoli, cauliflower and stock and cook for about 15 minutes.

Add soymilk and reheat to simmering.

Blend all the ingredients and add salt if needed.

 This is a delicious, hearty creamy soup, perfect for cold winter days.
