Salmon Parcels
/Ingredients
4 Salmon fillets
Sugar snap peas (about 20)
1-2 zucchinis thinly sliced lengthwise
1 leek
1 bunch asparagus
Lime or lemon
Parsley
Olive oil
Salt and pepper to taste
Method
Prepare 4 pieces of baking paper on the bench to wrap the salmon in.
Finely chop the leek and place on baking paper.
Add the salmon fillet and drizzle with lime juice, olive oil, salt, pepper and parsley.
Add 4-5 thin slices of zucchini and top with 4 asparagus and 4 or 5 sugar snaps.
Add more garnish if you wish and then fold baking paper into a parcel and secure with a couple of toothpicks.
Bake in a preheated oven at 180°C for 15 mins or until cooked through.
This varies with the thickness of the salmon.
This is brain food. It is delicious, nutritious and there is no washing of pots and pans afterwards.
This is great for dinner parties- try it once and you’ll be hooked.
