Carrots, currants and brown rice
/This a delicious lunch time favourite.
Ingredients
1 cup of brown rice
1 grated carrot
2 sticks of celery finely diced
Currants 2 tbsps
Coriander finely chopped to taste
Almonds ½ cup
Sesame oil
Tamari (soy sauce) to taste
1 spring onion finely chopped (optional)
Method
Boil the brown rice and add a little olive oil.
Add a grated carrot and the diced celery.
Add the currants and roast the almonds in a frypan for a few minutes and then cut into chunks and add to the rice.
Add the chopped coriander and finely,
Drizzle some sesame oil and tamari to taste and enjoy!
Tip: Boil the rice the night before and add some olive oil and refrigerate so that it is ready to go the next day for school or lunch.
