Chicken Shiitake and Bok Choy Soup

I love this warm, delicious, immune boosting soup. Perfect for the winter months or if you have a cough or cold. 

Ingredients

1 ½ litres of bone broth (I used home-made chicken stock)

Shredded cooked chicken 1-2 cups

2 cm grated ginger

6 fresh shiitake mushrooms

1 bunch of chopped bok choy

Salt to taste

Method

Heat stock and add shiitake mushrooms.

Add grated ginger and shredded chicken

Finally, add chopped bok choy and cook for 3-4 minutes.

NB I usually make chicken stock with bones but this time I used an organic chicken instead so I had the chicken meat already cooked.
